You will need mini tasting dishes/ ramekin for this recipe if you want to make mini cakes.
Ingredients
- Butter – room temperature, ½ cup
- Fresh Strawberries – sliced, 1 – 2 cups
- Fresh Blueberries, 1 cup
- Granulated Sugar, 1 cup
- All Purpose Flour, 1 ½ cups
- Baking Powder, 2 tsp
- Milk – room temperature, ¾ cup
- Vanilla Extract, 1 ½ tsp
- Large Egg, 2 whole
- Salt, ½ tsp
- Cream Cheese Frosting
Preparation
- Preheat the oven for 10 minutes at 350 degrees, fahrenheit.
- Grease mini baking dishes and large baking pan.
- Sift dry ingredients – flour, baking powder, and salt in a bowl.
- Beat sugar and butter in a separate bowl until fluffy.
- Whisk 1 egg at a time and vanilla extract into the sugar and butter mixture.
- Stir both dry ingredients mixture and milk, alternately into wet mixture.
- Mix until well combined, but do not overmix.
- Fill the mini tasting dishes and the baking pan with the batter.
- Bake the cakes for 45 – 60 minutes, less for smaller cakes.
- Cool the cakes for 15 – 20 minutes after removing them from the oven.
- Ice the mini tasting cakes with cream cheese frosting.
- Layer strawberries and blueberries onto the mini tasting cakes.
- Repeat steps 11 – 12 for the larger cake.

Tips
This batter is enough for a large Bundt cake. Use smaller, rectangular baking pans to make a two-layer cake or use mini loaf pans to make individual cakes.
