Mini Summer Butter Cakes

Mini Summer Butter Cakes

You will need mini tasting dishes/ ramekin for this recipe if you want to make mini cakes.

Ingredients

  • Butter – room temperature, ½ cup
  • Fresh Strawberries – sliced, 1 – 2 cups 
  • Fresh Blueberries, 1 cup
  • Granulated Sugar, 1 cup
  • All Purpose Flour, 1 ½ cups
  • Baking Powder, 2 tsp
  • Milk – room temperature, ¾ cup 
  • Vanilla Extract, 1 ½  tsp
  • Large Egg, 2  whole 
  • Salt, ½ tsp 
  • Cream Cheese Frosting 

Preparation

  1. Preheat the oven for 10 minutes at 350 degrees, fahrenheit
  2. Grease mini baking dishes and large baking pan.
  3. Sift dry ingredients – flour, baking powder, and salt in a bowl. 
  4. Beat sugar and butter in a separate bowl until fluffy.  
  5. Whisk 1 egg at a time and vanilla extract into the sugar and butter mixture.
  6. Stir both dry ingredients mixture and milk, alternately into wet mixture.  
  7. Mix until well combined, but do not overmix. 
  8. Fill the mini tasting dishes and the baking pan with the batter. 
  9. Bake the cakes for 45 – 60 minutes, less for smaller cakes.
  10. Cool the cakes for 15 – 20 minutes after removing them from the oven. 
  11. Ice the mini tasting cakes with cream cheese frosting. 
  12. Layer strawberries and blueberries onto the mini tasting cakes. 
  13. Repeat steps 11 – 12 for the larger cake.
  14. Enjoy!

Tips

This batter is enough for a large Bundt cake. Use smaller, rectangular baking pans to make a two-layer cake or use mini loaf pans to make individual cakes.
